Casting off is the process of decreasing the number of stitches, usually at the end of a project or the section of a project. The most common way is to knit a stitch, then knit a second stitch, pass the first stitch over the second stitch, this will leave you with only one stitch on your right needle. Continue by knitting the next stitch, then pass the remaining stitch over the newly created stitch. Generally unless you are finishing a row, it will tell you how many stitches to cast off.
